Walnut Cake
Making a walnut cake is a delightful way to incorporate the rich, nutty flavor of walnuts into a moist and delicious dessert. Here's a simple recipe for a basic walnut cake:
Ingredients:
For the Cake:
- 1 and 1/2 cups chopped walnuts
- 2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 and 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
For the Frosting (Optional):
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Toast the chopped walnuts in a dry skillet over medium heat for a few minutes until they become fragrant. Be careful not to burn them. Set aside to cool.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
- Gently fold in the toasted chopped walnuts into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- In a medium bowl, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
- Once the cake has cooled, frost it with the prepared frosting if desired.
- Slice and serve the walnut cake. It pairs well with a cup of coffee or tea.
