Ingredients:

For the Cake:

  • 1 and 1/2 cups chopped walnuts
  • 2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 and 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Frosting (Optional):

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

Instructions:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
    • Toast the chopped walnuts in a dry skillet over medium heat for a few minutes until they become fragrant. Be careful not to burn them. Set aside to cool.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
    • Gently fold in the toasted chopped walnuts into the batter.
    • Pour the batter into the prepared cake pan and smooth the top.
    • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    • In a medium bowl, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
    • Once the cake has cooled, frost it with the prepared frosting if desired.
